Actually you can do it now. Just touch inside the "Quoted text" window
then you can move the cursor around, delete text, place your text where
you want etc.

I think that feature is only in Android 2.2 devices because that
function is not available on my Droid X running Android 2.1 but I
believe I had that on my Droid running CyanogenMod6.
