Sounds like NM is out of the 'hostname setting' business.
You should be
able to edit your /etc/hosts manually and NM will not change it.
This would be good
news.
So far, my work around with static IPs had been to modify
/etc/nsswitch.conf to let it ignore "file" and to rely on dns only.
Not necessarily nice, but it appears to be working (at least for me).
