Please read my post again. Unless I'm mistaken, mimeapps.list does not
support globs. There is no way of of providing video/* or audio/*, say
as .mailcap allows you to. Do I make myself clear now? You will need a
separate line for every file type, no amount of scripting can help you
deal with that.
However if you tell me mimeapps.list does support globs, I'll shut up.

If you really want to, gnome supports this feature.
Otherwise I don't see what the problem is in a single format mapping.
