Ok so after scouring this site called "DistroWatch".....which has a MILLION different versions of Linux I've decided to go with:
PeppermintOS - laptop
Ubuntu LTS - desktop
Fedora laptop
Linux Mint desktop
PC-BSD desktop
Will have to figure out which one will be a server...a storage machine....etc.

For a server box, you might want to consider CentOS.

I do intend to use them all.....but at different times. I'm going to be setting up a server that I will need to be able to access from outside my home (Ubuntu Server maybe?) but now you've mentioned CentOS...I might go that route instead, I'll also want something that can act as a file server....holding all videos...LibreOffice Writer / Calc / Impress documents along with various media (music.....pdfs....etc) And finally I'll be testing things out with the laptops that I have....and finaly I'm going to have the "GrandMaster" machine which will be an my own personal machine that will do everything I need it to (edit - create music software files....create/edit graphic files etc...) BTW I play guitar and am looking to have a little "studio-in-a-box" for my personal machine.....thanks for the info...!!

As as a user of multiple distros (see my sig) I use, CentOS for my server boxes both physical & virtual, Fedora as my desktop, Ubuntu for the laptop, Debian for my home web server & OS X, well, because it's OS X.
I'm also shortly to be sitting my RHCSA exam so they're all lab orientated with the emphasis being on CentOS & Fedora but knowing all distros (within reason) for me is going to be necessary (I have Arch & Gentoo in VMs).

Check out openfiler.com. they've a boot'able ISO for iSCSI which simply worked for me and my needs. They also have an OpenNAS item that seems worth checking out.

Linux is linux.... you will learn that after fiddling with several distros. Each will have its own arrangement of icons, desktop manager, choice of pre-installed packages, but in the end... all are Linux... usually with the same applications available from its repos....
So, it´s always wise to "KISS" (Keep it simple, s...eriously)
I have chosen fedora because:
1. It´s got a large users community, so software is tested by hundreds of thosands (millions?) of eyes, and bugs are identified faster and solutions-bugfixes workarounds arribe quicker 2. it´s as close to ´bleding edge´ (latest versions of gnome, etc) as comfortably possible, without being alpha-quality software 3. being one of the "top 3" distros (Fedora, Ubuntu, SUSE), I never ran across a piece of software that I wanted to install that didn t have a fedora rpm available. 4. it´s got corporate backing/funding so its long-term prospects are somewhat secure.
Of course there´s tons of niche ´community´ distros but IMHO it´s akin to flying in a small single-engine fumigation airplane that takes off from an unpaved runway... you can get your own ´custom´ flight experience and custom decorated airplane but you can´t really blame anyone or expect top level service when things go wrong... specially in points #1 and #3 above...

This actually makes sense to me! I've been mucking about with a few other distros and I'm discovering that the Gnome desktop environment suits me fine....although Cinnamon, MATE, and KDE are very nice eye candy that would be great substitutes should the Gnome people ever decide to call it quits. I'm also loving the Community here, it appears to be HUGE! So I think I'll keep flying "Fedora Airways" and just use the smaller planes for testing, storage etc....

For laptops, netbooks and notebooks: Take a look to Fuduntu. Is very, very economical in its use of resources and have a pretty desktop. Here's the link: www.fuduntu.org

One of the project heads is the author of Jupiter, which does a really good job of resource management, so it's especially good for laptops, but I've toyed with migrating a desktop or two to Fuduntu.
It's ultimately a much smaller project than Fedora, however. The repositories are somewhat limited. Not bad, but I have ended up compiling or separately installing some things in Fuduntu that I believe would be available directly in Fedora with extended repositories.

finally it does not matter what distribution you chosse
if you are lazy with updates use a LTS if you need recent software use something like Fedora
samba, netatalk, ssh, apache, mysql... it's all the same
