Selinux generally stays out of the way as long as you put things in the
expected places, particularly if you are using the OS supplied packages.
There's usually not a lot of OS setup involved for webapps.
Also, given that centos is behind in terms of php/python/etc.. are
there "better" OS/platforms to use?
You are posting this to the Fedora users list, not the CentOS one. I
would recommend using Fedora. As you say, CentOS tends to be behind on
software versions and the web technologies tend to change very quickly.
