printconf-gui changes the system default, which is overridden by the per-user default in ~/.lpoptions.
It seems like something is getting confused, should I delete the .lpoptions file?
To change a user's default printer, use Preferences->More Preferences->Default Printer; this ends up writing out your ~/.lpoptions.
